I use about 6 oz yogurt to 2 gallons of milk in making yogurt, and my yogurt does get pretty thick, like yoplait or thicker. It is because I maintain a higher temperature than using your method. I heat to 180 degrees, then allow to cool to 120 degrees, add yogurt, stir, and put in sanitized gallon jars (have used quarts, also) and submerge in 120 degree water in an ice chest. It only takes 8-12 hours in the ice chest to get good firm yogurt. Yum!

Jenn, it just needs to be held between 80 and 120. You can put a lid on it and set it on the porch if it is warm enough outside. Some people put it in the oven and just turn the oven on for a minute or two throughout the day. The lady who showed me how to do it put it in a heavy pot and wrapped it in a towel. There was enough heat in it to get it to turn, but that never worked for me.

How warm does it need to be in the area where you set it aside? In other words, we do have AC here in Georgia and we're getting to the time of year where sometimes we use it. Will leaving it on the kitchen counter work if the AC is on? What if I put it in the pantry or oven (not turned on) where it's slightly warmer?

Probably what I really need to do is a yogurt experiment and find out! :)

if you live in a colder climate - and have a gas stove - the pilot light keeps the oven just the right temperature for this - and older fridges also emit just the right amount of heat for the yogurt to thicken if placed on top near the back.
I used to add a bit of honey when heating the milk so the whole batch was pre-sweetened... and ready for granola or fruit to add in. sooo YUM!

Thanks for that. My son has a total aversion to eating fruit , so I made it into smoothies for him and then he can't get enough of it! I also found some great smoothie recipe here and thought I'd share - lots of other great ideas there.

I remember my parents making yogurt this way! They'd actually put the wrap-covered bowl on top of the water heater. In the morning we'd have fresh yogurt. I'm tired of the commercial brands and their needless additives, it's back to making our own!

random comment with nothing to do with yogurt. i had just heard of using niacin to aid in many psycholigical issues (from the great documentary "Food Matters") and started researching it for a friend who has a son with PICA and multiple other issues. I stumbled upon this website and was ASTOUNDED at the research that has been done, what has been common knowledge among orthomolecular physicians for DECADES yet is unknown by virtually everyone else. Amazing things have been done by correcting B-vitamin deficiencies. This journal I'm linking is banned from the AMA library.... probably because its curing people all over without chemical meds! Anyway, I thought I'd pass the info on. You can search "children PICA treatment" and get some articles. Also look for "B3 dependent children". I pray this helps your son!

You can do this in cooler weather as well, especially on a day when you plan on doing lots of baking. The yogurt sits on the back of the stove enjoying the radiant heat just fine!

I'm going to refer back to this as soon as I make sure that our oldest has outgrown her lactose tolerance as appears to be so. I've been thinking of investing in a yogurt maker so maybe now I don't need one!
